BBQ grilled spare ribs

    pork spare ribs
  • BARBECUE SAUCE
  • 5
    ml
    whole black peppercorns
  • 15
    ml
    whole mustard seeds
  • 15
    ml
    cumin seeds
  • 15
    ml
    whole coriander seeds
  • 15
    ml
    star anise
  • salt to taste
  • 15
    ml
    crushed garlic
  • 65
    ml
    brown sugar
  • 30
    ml
    honey
  • 65
    ml
    Worcestershire sauce
  • 65
    ml
    olive oil
 

Method

 
Cut ribs into serving-size portions.
Combine all whole spices and seeds in a coffee grinder or pestle and mortar. Grind coarsely, transfer to a bowl and add salt, garlic, sugar, honey, Worcestershire sauce and olive oil. Mix well.
Rub spice mixture on all surfaces of ribs and allow to marinate for at least one hour.
Place ribs on a covered grill over an indirect heat and cook, turning every 15 minutes for an hour, or until tender and well cooked.
Serve with coleslaw and Potato salad.
