Avocado vinaigrette

Ingredients

    avocados, halved, peeled and stoned
  • SALAD DRESSING
  • 250
    ml
    in total, of:
  • finely chopped green, yellow and red peppers; spring onion; stoned black olives and crisply fried ba
  • 80
    ml
    wine vinegar
  • 15
    ml
    French mustard
  • 250
    ml
    olive oil
  • salt and pepper
 

Method

 
Place half an avocado cut side downward on a side plate or slice and fan them. Mix all the salad dressing ingredients and spoon over the avocado halves just before serving. Serves 6.
