Avocado sauce

  • 1
    large avocado, skinned, stored and mashed
  • 2
    cloves garlic, crushed
  • 125
    ml
    fresh basil, finely chopped
  • salt and freshly ground black pepper
  • 30
    ml
    olive oil
  • grated Parmesan cheese for serving
  • cooked pasta for serving
  • fresh lemon juice
 

Method

 
Blend all the ingredients for the sauce and mix into hot pasta. To enhance the flavour, sprinkle with fresh lemon juice.
