Avocado salsa salad

Ingredients (11)

1/2 cucumber — deseeded, diced
150 g cherry tomatoes — halved
1 avocado
1/2 red onion — diced
80 g sugar snaps — diced
30 g fresh coriander — chopped
DRESSING:
120 ml vinegar — rice
2 sugar
1/2 tsp red chilli — flakes
1 garlic — cloves, thinly sliced
2 sesame oil

Method:

Pour all of the dressing ingredients into a bowl and stir until emulsified.
Pop the onion, tomatoes, cucumber and sugar snaps into a bowl and give them a good mix.
Add half of the dressing, coriander and avocado and toss together, taste,  and add a little more dressing if you like.

Serve with grilled fresh kingklip/hake/chicken breasts or baked sweet potato.
