Avocado and ruby grapefruit salad

    ruby grapefruit
  • 2
    avocado pears, peeled, stoned and sliced lengthways
  • 100
    g
    baby lettuce leaves or rocket
  • 1
    red onion, sliced and separated into rings
  • toasted sunflower seeds
  • DRESSING
  • 7
    ml
    honey
  • 1
    lemon, juice
  • 5
    ml
    wholegrain mustard
  • 65
    ml
    sunflower or olive oil
  • salt and milled pepper
 

Method

 
Peel grapefruit lengthways, removing all pith. Break grapefruit into segments. Using a sharp knife, remove and discard membranes. Arrange avocado slices, grapefruit segments and lettuce on individual plates or a large platter. Scatter onion rings and sunflower seeds over. DRESSING: Whisk ingredients together and pour over salad. Serve immediately.
