Avocado and papino tower

  • SALAD DRESSING

    ml
    orange juice
  • 10
    ml
    dried tarragon, crushed
  • 50
    ml
    olive oil
  • freshly ground black pepper
  • SALAD
  • 1
    ripe avocado, halved and stoned
  • 10
    ml
    freshly squeezed lemon juice
  • 1
    small papino, skinned and sliced
  • 16
    thin slices mozzarella cheese, rolled up
  • 250
    ml
    mixed lettuce leaves
  • 4
    whole pecan nuts, coarsely chopped
 

Method

 
Whisk together all the ingredients for the salad dressing and chill until needed. Slice the avocado into thin slices and brush lightly with lemon juice. Chill. Layer the avocado and papino slices, cheese rolls and lettuce leaves in alternating layers on 4 serving platters. (Insert thin kebab skewers vertically down the centre to secure the salad until just before serving. Garnish with the remaining cheese rolls and nuts and moisten with salad dressing.
