Avocado and apple salad with toasted walnuts

    avocados, peeled and sliced

    green apples, cored and sliced
  • fresh lemon juice
  • 1
    packet rocket leaves
  • 2
    oranges, cut into segments
  • 50
    walnuts, toasted
  • freshly ground sea salt
  • freshly ground black pepper
  • 30
    orange juice
  • 30
    olive oil
  • freshly grated orange peel


Moisten the avocados and apples with lemon water made with the lemon juice to prevent discoloration.
Use four large individual salad plates or soup bowls in which to assemble the salad.
Place a generous quantity of rocket leaves in each dish, arrange the avocado and apple slices and orange segments on top and sprinkle with the walnuts.
Season with salt and pepper.
Blend the ingredients for the dressing and drizzle on top.

Chefs tips:
- Make sure to serve quite soon after preparatin as the apples will eventually start to colour.
- Pan-fy some chicken breasts in some olive oil and season well. Slice and place on top of your salad with another splash of dressing.
- Fillets of fresh fish will aslo work here.
