Avo, feta and chicken pasta salad

Ingredients

  • 500
    g
    chicken fillet cut into strips
  • Chicken marinade:
  • NoMu Moroccan rub
  • Fresh salt and pepper
  • Thyme
  • 1
    tsp
    garlic, crushed
  • Lemon juice
  • 1
    Tbs
    All Gold tomato sauce
  • Nandos sweet chilli sauce
 

Method

Boil pasta until al dente (reserve 1 cup of cooking liquid).
Heat some olive oil with 1 sliced onion and a tsp of cumin seeds.
When the onion is translucent add the chicken and sauté gently until the chicken in cooked through (add a little of the pasta liquid as you go along to ensure the chicken doesn’t burn out and retains a bit of a sauce).
Add sliced green, red and yellow peppers, rosa tomatoes and Danish feta cheese.
Allow the peppers and tomatoes to soften and the cheese to melt slightly.
Serve on a bed of prepared pasta, top with slices of avo and a sprig of thyme.
