    packet frozen puff pastry, thawed

    bunch
    spring onions, chopped
  • 410

    bean sprouts, drained
  • 410

    asparagus salad cuts, drained
  • salt and cayenne pepper, to taste

    eggs
  • 250
    ml
    fresh cream
  • 125
    ml
    cheddar cheese
  • 6
    fresh asparagus stems, boiled

Preheat oven to 200°C. Grease a 30cme pie dish. Roll out pastry and place into prepared pie dish. Prick surface with a fork, place greaseproof paper on the pastry, fill with dried beans to weigh down and bake for 10 minutes. Remove the greaseproof paper and discard beans. For the filling, mix together spring onions, bean sprouts, asparagus, salt and cayenne pepper, to taste. Spoon into pastry case. Beat together eggs and cream, stir in cheddar cheese and pour over asparagus mixture. Arrange fresh asparagus on top of filling. Bake quiche in the oven for 40 to 50 minutes, or until set in the middle. Remove from oven, cut into wedges and serve with a salad.
