Asparagus, cheese and brandy sauce

    1 can asparagus pieces

    brandy, heated
  • 500
    ml
    cream or milk
  • 25
    ml
    cake flour
  • 25
    ml
    butter
  • 100
    ml
    grated mature Cheddar cheese
  • 0
    salt and freshly ground black pepper, to taste
 

Method

Heat the butter in a saucepan over medium heat. Add the asparagus and heat. Add the heated brandy and ignite. Once the flames have died down stir in the cream or milk. Using a fork mix the butter and flour in a small bowl to make a beurre manié. Gradually add the butter and flour mixture, stirring well after each addition until the sauce thickens. Season with salt and pepper and stir in the cheese just before serving.
