Asian-style pesto

  • 1
    large handful of fresh basil
  • 1
    thumb of fresh ginger, peeled and chopped roughly
  • 2
    medium sized garlic cloves
  • 1
    chilli, or to your taste
  • juice of 1 lemon
  • 1
    tsp
    brown sugar
  • 100
    g
    roasted cashew nuts
  • 1
    small handful of grated parmesan
  • 50-75
    ml
    good extra virgin olive oil
  • salt and black pepper to taste
 

Method

5 mins
 
Whizz all the ingredients in a blender and season to taste. You can add more chillis for fire, ginger for freshness or lemon for tartness and of course more garlic if you want to ward away all those pesky (but sexy) vampires.
 
It's fun to play around and tweak it to your palate or the dish you want to serve it with.
