Ingredients

    small baby cabbages - finely sliced (or two cups of sliced cabbage)
  • 2
    large carrots - grated
  • 200

    green beans - thinly sliced
  • 200

    baby corn - thinly sliced
  • 100

    unsalted cashews - crushed
  • 2
    spring onions - chopped diagonally
  • a large handful coriander - chopped
  • Dressing:
  • 2
    Tbs
    white sugar
  • 2
    Tbs
    rice vinegar
  • 1
    Tbs
    sesame oil
  • 2
    Tbs
    sunflower oil
  • 2
    Tbs
    soy sauce
  • 1
    red chilli - chopped
 

Method

Chop and grate all the fresh ingredients. Mix all the salad dressing ingredients well.

Mix all salad ingredients together with the salad dressing and there you go. Scrumptious, healthy and just irresistibly delicious.
