Ingredients (9)

100.00 ml olive oil — extra virgin
2.00 garlic — cloves, crushed
60.00 g bacon — slices
800.00 g tinned tomatoes — whole peeled, chopped
1.00 ml dried chillies — crushed
salt
12.00 fresh basil — torn
30.00 ml parmesan cheese — grated
spaghetti — or penne

Method:

1. Heat all but 15 ml of the olive oil in a pan and sauté garlic until sizzling.
Add bacon strips, cook until crisp. Add tinned tomatoes, crushed chillies and a little salt. Reduce the heat and simmer until the tomatoes have reduced and the oil separates to sides and top (± 40 minutes). Remove from heat and set aside.
2. Cook pasta. Return sauce to heat and add basil. When pasta is cooked, drain and toss with sauce in pan, turning off the heat. Stir in remaining olive oil and grated cheese. Season and serve.
