Ingredients (6)

125.00 ml orange juice — freshly squeezed
2.00 lemon — juice only
60.00 ml orange liqueur
16.00 apricots — dried
8.00 figs — preserved
60.00 ml ginger — preserve in syrup

Method:

Heat orange juice, lemon juice and liqueur together in a saucepan.
Add apricots just before boiling point is reached. Once boiling, add figs.
Cook for 3 to 5 minutes. Remove fruit and arrange on individual plates.
Add about 30 ml each ginger and fig syrups to juice mixture and heat through.
Pour over fruit, stud with pieces of ginger and serve on its own or with cream, natural yoghurt or a mixture of both.
TOTAL KILOJOULE COUNT: 3 515 kJ (840 Cal). A portion: 880 kJ (210 Cal).
