Ingredients (9)

1.00 kg fruit — apricots or peaches
2.00 onion — finely grated
1.00 whole garlic bulb — grated
940.00 ml vinegar — white garpe
1.00 kg sugar
35.00 ml ginger — ground
10.00 ml mustard — powder
15.00 ml salt
10.00 ml cayenne pepper

Method:

Rinse the fruit, cut in half and remove the stones. Boil until soft, then mince or beat until smooth with a wooden spoon. Boil the onion and garlic in 250 ml water and 250 ml of the vinegar until soft. Add the sugar, the remaining vinegar and the seasonings, according to taste. Heat slowly and stir until the sugar has dissolved. Boil for 2 minutes and add the fruit. Boil for 30 minutes or until the chutney has thickened. Stir frequently to prevent the mixture from sticking to the bottom of the saucepan. Pour into hot, sterilised bottles and seal. Makes enough to fill about 5 chutney bottles (410 g each).
