Apricot nut slice

    hazelnuts

    glacé apricots, chopped
  • 90
    g
    cake flour
  • 30
    ml
    cocoa
  • 5
    ml
    cinnamon
  • 100
    ml
    honey
  • 160
    g
    sugar
  • 60
    g
    dark chocolate, broken into pieces
  • icing sugar
 

Method

40 minutes
 
Grease a 20 cm loose-bottomed cake tin. Line base and sides with baking paper. Combine nuts, apricots, flour, cocoa and cinnamon in a bowl. Heat honey and sugar in pan to dissolve. Bring to boil and reduce heat. Simmer for about five minutes without stirring. Stir chocolate and hot syrup into nut mixture, mixing well. Spread evenly in tin. Bake in preheated 160 °C oven for about 35 minutes. It will still feel soft. Cool in tin. Turn out and remove paper. Wrap in cling film and stand at least a day before cutting. Dust with icing sugar before cutting into thin slices to serve.
