Apricot fritters

Ingredients

  • 625
    ml
    poached or tinned apricots
  • 250
    ml
    sugar
  • 250
    ml
    flour
  • 3
    eggs
  • 5
    ml
    vanilla essence
  • butter, to fry and serve
  • sifted icing sugar, to sprinkle
 

Method

 
Mix all the ingredients together in a bowl.
Melt a little butter in a non-stick pan, and place big spoons of the mixture in the pan.
Cook on both sides until golden and pile onto a plate.
Serve hot with a blob of melted butter and sprinkle over plenty of icing sugar.
