Apricot chutney

    ripe apricots
  • 1
    onion, grated
  • 2
    cloves garlic, crushed
  • 375
    ml
    white grape vinegar
  • 7
    ml
    ground coriander
  • 5
    ml
    salt
  • 1
    ml
    cayenne pepper (optional)
  • 625
    ml
    sugar
 

Method

 
Halve the apricots and remove the stones. Boil the onion and garlic in the vinegar until soft. Add the apricots and remaining ingredients, heat and stir until the sugar has dissolved. Bring to the boil and simmer until a puré;e is formed and the mixture is no longer watery. Stir occasionally to prevent the mixture from sticking to the bottom of the saucepan. Transfer to clean sterilised bottles. Makes 1,6 litres.
