Apricot and nut pilaf

    turmeric

    chicken or vegetable stock

    dried apricots
  • 100

    mixed nuts

    onions, sliced
  • 5

    piece fresh ginger, grated
  • 2
    large cloves garlic, crushed
  • 6
    cardamom seeds, lightly crushed
  • 2
    cinnamon
  • 4
    whole cloves
  • 225
    g
    basmati rice
  • 15
    ml
    honey
  • 1
    orange, rind grated and flesh cut into segments
  • salt and black pepper to taste
 

Method

 
Mix the turmeric and stock and pour over the apricots. Heat a little olive oil in a pan and stir-fry the nuts until golden. Remove from the pan. Fry the onions, ginger, garlic and all the spices in extra oil until the onions are tender. Remove the cardamom seeds and cloves if desired and stir in the rice. Stir-fry for a few minutes. Add the stock, apricots and orange rind. Cover and heat for about 10-12 minutes or until the liquid is absorbed and the rice is tender but not mushy. Season to taste with salt and pepper. Remove from the pan and add the orange segments and nuts. Serve hot. Serves 4.
