CRUST
125.00 ml butter
300.00 ml flour
45.00 ml water — cold
FILLING
50.00 g butter
125.00 g marzipan — grated
2.00 eggs — extra-large
45.00 ml flour — cake
2.00 ml Baking powder
2.00 apples — cooking, green, peeled and sliced
30.00 ml sugar
5.00 ml cinnamon — ground

Method:

Preheat the oven to 180 ºC (350ºF). Spray 6-7 loose-bottomed 10 cm diameter pie tins with non-stick spray. Rub the butter into the cake flour until the mixture resembles breadcrumbs. Add the water and mix to form a dough which is easy to roll out. Gather the dough into a ball and wrap in plastic wrap. Chill far 30 minutes. On a lightly floured surface roll out the pastry and use to line the pie tins. Trim the edges and chill until needed. Cream the butter until light and fluffy. Add the marzipan. Beat well and add the eggs one by one, beating well after each addition. Mix the cake flour and baking powder and add to the butter mixture. Mix lightly. Divide the mixture between the lined pastry tins and arrange the apple slices on top. Mix the sugar and cinnamon and sprinkle on top. Bake for 15-20 minutes or until the filling has set and the pies are golden brown on top. Cool and remove from the tins. Serve with tea.
Makes 6-7 tartlets.
