Apple tart

  • 250 ml cake flour
  • 5 ml baking powder
  • 1 ml salt
  • 80 ml sugar
  • 60 ml butter
  • 1 extra-large egg
  • 60 ml milk
  • 750 ml cooked pie apples
  • 2 ml ground cinnamon
  • 1 ml nutmeg
  • 125 ml smooth apricot jam


Preheat the oven to 180 °C and grease a 24 cm ovenproof dish with butter or non-stick spray.
Sift the cake flour, baking powder and salt together and mix in 30 ml of the sugar.
Rub in the butter with your fingertips until the mixture is crumbly.
Beat the egg and milk together and add to the flour mixture.
Spread the batter on the bottom of the prepared dish and arrange the apples on top.
Sprinkle the cinnamon, nutmeg and remaining sugar on top and bake for 45 minutes or until a testing skewer inserted into the centre of the tart comes out clean. Heat the jam slightly and spread over the tart as soon as it comes out of the oven.
Serve with cream.
Makes 1 medium-sized tart.
