Ingredients

 
  • 1
    kg
    green apples, peeled, cored and diced
  • 2
    lemons, juice
  • 1
    kg
    sugar
  • 60
    ml
    water

Method

 
Butter a 34 x 24 cm baking sheet. Place all the ingredients in a heavy-based saucepan and bring to the boil. Reduce the heat and boil to 138 ºC (when a little of the syrup is cooled it forms a hard ball). Stir frequently. Pour onto a greased baking sheet and cool completely. Shape teaspoonfuls of the mixture into balls and wrap in cellophane. Store in an airtight container.
