Apple sauce muffins

    apple sauce
  • 100
    g
    almond flakes
  • 150
    g
    currants
  • 100
    ml
    water
  • 80
    ml
    softened butter
  • 200
    g
    white sugar
  • 280
    g
    cake flour
  • 2
    ml
    salt
  • 5
    ml
    baking powder
  • 2
    ml
    allspice
  • 2
    ml
    nutmeg
  • 2
    ml
    ground cinnamon
 

Method

30-40 min
 
Preheat the oven to 180 ºC (350 ºF). Spray two 12-hollow muffin tins with non-stick spray. Blend the apple sauce, almonds, currants, water, butter and sugar together and heat till the sugar has just melted. (Do not allow the mixture to boil.) Remove from heat and cool. Sift the remaining ingredients together. Add the cooled apple sauce mixture and mix well. Turn the batter into the prepared muffin tins and bake for 30 minutes or till done. The muffins are done when a testing skewer comes out clean when inserted into the centre of the muffins. Serve hot or cold with butter. Makes 24 muffins.
