Ingredients (12)

250.00 ml apple sauce
100.00 g almonds — flaked
150.00 g currants
100.00 ml water
80.00 ml butter — softened
200.00 g white sugar
280.00 g flour — cake
2.00 ml salt
5.00 ml Baking powder
2.00 ml allspice
2.00 ml nutmeg — ground
2.00 ml cinnamon — ground

Method:

Preheat the oven to 180 ºC (350 ºF). Spray two 12-hollow muffin tins with non-stick spray.
Blend the apple sauce, almonds, currants, water, butter and sugar together and heat till the sugar has just melted. (Do not allow the mixture to boil.) Remove from heat and cool.
Sift the remaining ingredients together. Add the cooled apple sauce mixture and mix well. Turn the batter into the prepared muffin tins and bake for 30 minutes or till done. The muffins are done when a testing skewer comes out clean when inserted into the centre of the muffins.
Serve hot or cold with butter.
Makes 24 muffins.
