Ingredients (11)

250.00 ml flour — cake
10.00 ml Baking powder
salt — pinch
125.00 ml sugar
2.00 eggs — extra-large
50.00 ml oil
5.00 ml vanilla — essence
125.00 ml water — boiled
2.00 apples — green, peeled and sliced
25.00 ml cinnamon sugar
jam — apricot

Method:

Spray a 1,2 litre microwave angel cake tin with non-stick spray, line the base with paper towelling, and spray once more. Sift the cake flour, baking powder and salt together and mix in the sugar. Beat the eggs, oil, vanilla essence and boiling water together. Add to the dry ingredients and mix. Turn into the prepared tin and arrange the apple slices on top. Sprinkle with the cinnamon sugar and place the cake tin on an inverted saucer in the microwave oven. Microwave for 6 minutes on 100 per cent power or until the cake shrinks from the sides of the tin. Leave for about 10 minutes before turning out. Spread the cake with a little apricot jam if desired. (Tested in a 600 W microwave oven).
Makes a medium-sized cake.
