Ingredients (8)

7.00 apples — Royal Gala, peeled, cored, thinly sliced
300.00 ml sugar
3.00 ml cinnamon — ground
5.00 ml cardamom — ground
2.00 ml lemon — zest only
15.00 ml brandy — or Calvados
4.00 eggs — seperated
60.00 ml almonds — ground

Method:

Preheat the oven to 200°C and grease an ovenproof dish with butter.
Place the apple slices in a saucepan with 250 ml of the sugar.
Add the spices and lemon rind and simmer over low heat until the apples are soft, stirring occasionally to dissolve the sugar.
Stir in the Calvados or brandy and pour into the prepared dish.
Beat the egg yolks and the rest of the sugar until thick and creamy and stir in the almonds.
Whisk the egg whites until they form stiff peaks and fold into the yolk mixture.
Spoon the egg mixture over the apples and bake for 20 minutes or until golden brown.
Serve with custard if preferred.
