Ingredients (12)

150.00 g flour — self-raising
2.00 eggs
150.00 g castor sugar
50.00 g butter
salt — pinch
50.00 ml milk
420.00 g apples — pie
SYRUP
125.00 ml cream
100.00 g sugar — granulated
50.00 g butter
5.00 ml caramel — essence
cream — whipped or custard, to serve

Method:

1. Mix flour, eggs, castor sugar, butter, salt and milk in an electric mixer and beat on high speed for 3 minutes.
2. Pour into a deep, 20 cm ovenproof dish, and spread pie apples over the top. Bake in a preheated oven at 175 ºC for 30 minutes, then reduce the temperature to 150 ºC and bake for a further 30 minutes.
3. Place ingredients for syrup in a saucepan and just bring to the boil. Pour syrup over pudding as soon as it comes out of the oven and leave until syrup has been completely absorbed.
4. Serve pudding hot or cold with whipped cream or custard.
