Apple, pork sausage and blue cheese salad

    Granny Smith apples, sliced into rounds
  • 30
    ml
    honey
  • 2
    pork sausages
  • 15
    ml
    wholegrain mustard
  • 60
    ml
    extra virgin olive oil
  • 0.50
    lemon, the juice
  • 45
    ml
    red wine vinegar
  • 50
    g
    watercress
  • 50
    g
    baby spinach
  • 100
    g
    blue cheese, sliced
  • salt and freshly ground black pepper
 

Method

 
Place the apples in a baking dish, drizzle with honey and cook under a hot grill until apples are soft and sticky.
In the meantime, cook the sausages in a non-stick frying pan.
When cooked, take them out and keep warm.
Add the mustard, olive oil, lemon juice and vinegar to the pan. Heat through.
Place the spinach leaves in four dishes, top with sliced sausages, apples and cheese.
Pour over the dressing and any juices leftover from the apples. Season to taste.
