Ingredients (12)

250.00 ml flour — cake
1.00 ml salt
2.00 ml Bicarbonate of soda
10.00 g Superbake Instant Yeast
80.00 g margarine
125.00 ml sugar
2.00 eggs — large, beaten
150.00 ml milk — lukewarm
410.00 g apples — pie

250.00 ml cream
250.00 ml sugar
5.00 ml vanilla — essence

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 22 x 22 cm ovenproof dish with non-stick spray.
Mix the cake flour, salt and bicarbonate of soda together. Add the instant dry yeast and mix.
Cream the margarine and sugar together until light and creamy. Add the dry ingredients to the margarine mixture, alternating with the beaten eggs and milk. Mix well.
Pour into the prepared oven dish and arrange the pie apples on top. Cover with greased plastic and leave in a warm place to rise until double in volume, about 25 to 30 minutes.
Bake for 25 minutes or until done and golden brown.
Mix the cream and sugar for the syrup in a saucepan and heat slowly until the sugar has dissolved. Boil lightly for five minutes. Add the vanilla essence and pour over the syrup while the pie is still hot.
Serve warm or cold with cream, custard or ice cream.
Makes a medium-sized pie.
