PASTRY
300.00 ml flour — cake
150.00 g butter
50.00 ml sugar
eggs — yolks only
15.00 ml water — iced
4.00 apples — peeled, cored
FILLING
80.00 g marzipan
1.00 eggs — extra-large, beaten
sugar

Method:

Preheat the oven to 200 ºC (400 ºF). Spray a baking sheet with non-stick spray.
Process the cake flour, butter and sugar in the food processor until the mixture resembles breadcrumbs. Add the egg yolk and water. Mix until the dough forms a ball around the blade. Remove from the food processor and wrap in plastic wrap.
Chill for 30 minutes. Fill the hollow of each apple with rolls of marzipan.
On a lightly floured surface roll out the pastry thinly. Cut into squares large enough to generously cover the apples, about 15 x 15 cm. Place an apple in the centre of each square. Bring the four corners of the pastry to the top of each apple and press together. Place the apples upside down on the prepared baking sheet. Brush the pastry with beaten egg and sprinkle with sugar. Bake for about 30 minutes or until done and the pastry is golden brown. Serve slightly cooled with whipped cream or ice cream.
