Ingredients (9)

3.00 eggs — extra-large
190.00 ml sugar
190.00 ml flour — cake
3.00 ml Baking powder
30.00 ml custard powder
20.00 ml cornflour
200.00 g butter — melted
2.00 green apple — Granny Smith, peeled, cored, thinly sliced
cinnamon sugar

Method:

Preheat the oven to 200 ºC (400 ºF).
Spray a muffin tin with deep hollows with non-stick spray or grease well. Alternatively, line with paper cups. Whisk together the eggs and sugar until light and creamy. Sift together the dry ingredients. Mix in the melted butter and fold into the egg mixture.
Fill the muffin tin hollows three quarters of the way with the batter. Arrange the apple slices on top, pressing them slightly into the batter.
Sprinkle with cinnamon sugar. Bake for about 15 to 20 minutes or until a testing skewer comes out clean.
