    extra-large egg

    oil
  • 250
    ml
    apple, skinned, cored and diced
  • 75

    raisins
  • 30
    ml
    extra sugar
  • 2
    ml
    extra ground cinnamon
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Grease a 12-hollow muffin tin. Sift the cake flour, baking powder, salt and ground cinnamon together. Add the sugar and mix. Beat the egg, milk and oil together. Add to the dry ingredients along with the apple and raisins. Stir until just blended. Fill each muffin hollow three-quarters full with the mixture. Combine the extra sugar and cinnamon and sprinkle over each muffin. Bake for about 20 minutes or until golden brown. Serve with honey butter (see recipe). Makes 12 muffins.
