    cake flour

    baking powder

    salt

    nutmeg

    sugar
  • 60
    ml
    butter, melted
  • 125
    ml
    milk
  • 1
    egg, whisked
  • 250
    ml
    finely chopped apple
  • TOPPING
  • 1
    apple, peeled, cored and grated
  • 2
    ml
    cinnamon
  • 60
    ml
    light brown sugar
 

Method

 
Preheat oven to 200 °C and grease a muffin tin with 12 hollows.
Line the hollows with paper cups.
Sift together the dry ingredients, except the sugar.
Mix the sugar, butter, milk, egg and apple and add to the dry ingredients, stirring until just mixed.
Spoon the batter into the hollows, filling each three quarters of the way.
Mix the apple, cinnamon and brown sugar and sprinkle on top.
Bake for 20 to 25 minutes or until done.
Serve lukewarm.
