CRUST
200.00 g tennis biscuits — crushed
100.00 ml butter
FILLING
397.00 g condensed milk
125.00 ml lemon juice
2.00 eggs — seperated
385.00 g pie apples — or pears, chopped
50.00 ml castor sugar

Method:

Preheat the oven to 180 ºC. Mix the biscuits with butter and press into a
medium-sized pie dish. Pour the condensed milk into a mixing bowl and add small quantities of the lemon juice at a time while beating continuously. Beat the egg yolks until light and add to the condensed milk mixture. Add the pie apples and mix. Spoon the mixture into the prepared pie crust and bake for about 10 minutes. Beat the egg whites in a clean, fat-free dish until soft peaks are formed and beat in the castor sugar a little at a time. Spoon the meringue over the pie filling and bake until straw-coloured, about 15 minutes. Serve lukewarm or cold.
Makes 1 medium-sized tart.
