Ingredients (14)

250.00 g flour — cake
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
10.00 ml cinnamon — ground
5.00 ml ginger — ground
10.00 ml mixed spice — ground
200.00 g castor sugar
3.00 eggs — large
200.00 ml sunflower oil
300.00 ml apples — grated
250.00 g fruit and nut cake mix
100.00 g sultanas
60.00 ml apricot juice
85.00 ml jam — apricot

Method:

Sift dry ingredients together.
Beat sugar, eggs and oil together well.
Mix apple, fruit and nut cake mix, sultanas, apricot juice and jam together. Mix the two mixtures alternately into the dry ingredients.
Spoon into a greased and lined 22 cm cake tin.
Bake in preheated 180 °C oven for 45 minutes to one hour until cooked through. Cover with aluminium foil if cake begins to brown too soon.
Allow to stand for 10 minutes, then remove from tin and allow to cool. Sprinkle with brandy if desired. Wrap well in aluminium foil until ready to ice or eat.
Makes 1 x 22 cm cake.
