Apple fruitcake

    g
    cake flour
  • 5
    ml
    baking powder
  • 5
    ml
    bicarbonate of soda
  • 10
    ml
    ground cinnamon
  • 5
    ml
    ground ginger
  • 10
    ml
    ground mixed spice
  • 200
    g
    castor sugar
  • 3
    large eggs
  • 200
    ml
    sunflower oil
  • 300
    ml
    grated apple, excess juice squeezed out
  • 250
    g
    fruit and nut cake mix
  • 100
    g
    sultanas
  • 60
    ml
    apricot juice
  • 85
    ml
    apricot jam
 

Method

1 hour
 
Sift dry ingredients together. Beat sugar, eggs and oil together well. Mix apple, fruit and nut cake mix, sultanas, apricot juice and jam together. Mix the two mixtures alternately into the dry ingredients. Spoon into a greased and lined 22 cm cake tin. Bake in preheated 180 °C oven for 45 minutes to one hour until cooked through. Cover with aluminium foil if cake begins to brown too soon. Allow to stand for 10 minutes, then remove from tin and allow to cool. Sprinkle with brandy if desired. Wrap well in aluminium foil until ready to ice or eat. Makes 1 x 22 cm cake.
