Apple flap jacks

Ingredients

  • 2
    eggs, well beaten
  • 1 1/2
    cup
    milk
  • 2
    cup
    flour
  • 1
    tsp
    baking powder
  • 1/2
    tsp
    salt
  • 1/4
    cup
    sugar
  • 3
    medium apples, peeled, cored and coarsely grated
  • 1
    tsp
    vanilla essence
  • Oil for frying
  • Castor sugar for dusting
 

Method

15 mins
 
Mix eggs and milk in a large bowl.
In a smaller bowl mix the flour, baking powder, salt and sugar.
Combine the wet and dry ingredients and stir in the apples.
Fry spoonfuls in a thin layer of oil on a medium heat until golden brown and cooked through. Drain on kitchen paper towels and sprinkle with castor sugar just before serving.
