    pie apples, coarsely chopped

    lemon rind, finely grated

    smooth apricot jam
  • 250

    cream
  • 2
    ml
    vanilla essence
  • 10
    ml
    icing sugar
  • ICING (OPTIONAL)
  • 150
    g
    icing sugar
  • 50
    ml
    granadilla pulp
  • 5
    ml
    butter
 

Method

 
Following the step-by-step instructions for making rich shortcrust pastry, prepare the pastry and line a 20 cm flan tin. Blend the pie apples, lemon rind and apricot jam with a fork until the apples are nearly smooth. Turn the mixture into the prepared pastry shell. Beat the cream, vanilla essence and icing sugar together until thick and pour over the, apple mixture. Sift the icing sugar into a bowl and add the granadilla pulp and butter. Blend until a smooth paste is formed and spread on top of the cream. Chill for one hour. Makes a medium tart.
