Apple fingers

    g
    butter or margarine, melted
  • 350
    ml
    castor sugar
  • 840
    ml
    self-raising flour
  • 2
    eggs, lightly beaten
  • 2
    ml
    salt
  • 1
    large can pie apples
  • SPRINKLE
  • 10
    ml
    granulated sugar
  • 3
    ml
    ground cloves
  • 3
    ml
    cinnamon
 

Method

 
1. In a large mixing bowl, rub butter into sugar and flour. Once mixture resembles fine breadcrumbs, add beaten eggs and salt and mix until a firm dough is formed. 2. Line a large Swiss roll tin with half the dough. Chop apples roughly and place evenly over the pastry. Sprinkle the sugar and spices over the top. 3. Grate or crumble the remaining dough evenly over apples and bake in a preheated oven at 170 ºC for 45 to 60 minutes, or until nicely browned. Cut into fingers and dust with icing sugar before serving.
