CRUST
180.00 g flour — cake
5.00 ml Baking powder
salt
2.00 ml cinnamon — ground
60.00 ml sugar
5.00 ml orange — zest only
110.00 g butter — grated
1.00 eggs — yolk only
50.00 ml water — iced
FILLING
810.00 g pie apples — sliced
5.00 ml orange — zest only
2.00 eggs
125.00 ml sugar
250.00 g cream cheese
30.00 ml flour — cake
45.00 ml raisins
salt — pinch

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 28 x 20 cm loose-bottomed pie dish with non-stick spray.
Sift the dry ingredients together. Add the lemon rind and using your fingertips, rub in the butter until the mixture resembles breadcrumbs. Add the egg yolk and enough water to form a stiff dough. Gather the dough into a ball and cover in plastic wrap. Chill for 30 minutes.
Roll out the pastry on a floured surface until 5 mm thick and line the prepared pie dish with it. Prick the base of the crust.
Arrange the pie apples on the pie crust and sprinkle the orange rind over.
Beat the eggs and sugar together until light and creamy. Add the cream cheese and beat thoroughly. Sift the cake flour over and fold in gently. Add the raisins and salt, mixing well. Pour the mixture over the apple layer and bake for 30 minutes or until the filling turns pale brown. Remove from the oven and cool slightly before removing from the pan. Cool completely.
Serve with cream if desired.
Serves 10-12.
