Apple cider cake

    large eggs

    cake flour

    baking powder
  • 3
    green apples, peeled and sliced
  • SAUCE
  • 100
    ml
    cream
  • 200
    ml
    apple cider
  • 15
    ml
    lemon juice
 

Method

60 minutes
 
Cream butter and sugar together until light. Beat in eggs, one at a time. Fold in flour and baking powder. Spoon mixture into a greased and lined 25 cm springform pan. Layer the apple slices evenly over the cake batter mixture. Bake in preheated 160 °C oven for 50 to 60 minutes until cooked through and golden. SAUCE: Bring cream, cider and lemon juice to the boil. Simmer gently for 15 minutes. Pour over the cake. Serve warm or at room temperature.
