Apple chutney

    kg
    cooking apples, peeled, pitted and cubed
  • 500
    g
    raisins
  • 1
    tsp
    grated lemon rind
  • 750
    g
    light muscovado sugar
  • 2
    medium onions , finely chopped
  • 2
    tsp
    yellow mustard seeds
  • 2
    tsp
    fresh ginger, grated
  • 1
    small green chilli – finely chopped (if you don’t like spicy food, remove the seeds)
  • Sea salt to taste
  • 700
    ml
    cider vinegar
 

Method

40 mins
 
Combine all the ingredients in a large, heavy saucepan and bring the mixture to a boil over a medium heat.

Simmer uncovered, stirring continuously for about 40 minutes until it is thick and pulpy.

Remove from the heat and allow to cool - then transfer to sterilised, clean, dry jars and seal.
