Apple cakes with bacon and mustard dressing

Ingredients (10)

375.00 ml flour — cake
125.00 ml cornflour — maizena
5.00 ml Baking powder
50.00 ml castor sugar
1.00 eggs — large
175.00 ml milk
2.00 apples — green, peeled and grated
250.00 g bacon — rindlesss back, fried
Dressing: creamy mayonnaise
40.00 ml Dijon mustard
5.00 ml Tabasco sauce

Method:

1. Sift the flour, corn flour and baking
powder. Stir in the castor sugar. Beat the
egg, milk and 175ml water, and add the
grated apple. Stir into the dry ingredients
until just mixed.

2. Heat a greased griddle pan or
non-stick frying pan over a medium heat
and fry spoonfuls of the batter until it
starts to bubble on the surface. Turn over
and cook for another few minutes until
cooked through.

3. Dressing Stir the mayonnaise, mustard
and Tabasco sauce. Add a little milk if the
dressing is too thick.

4. Serve the apple cakes hot, topped with
the bacon and drizzled with the dressing
or some honey if you prefer.
