Apple and spice cake

    quantity standard butter cake mixture (see recipe)

    ml
    ground cinnamon
  • 2
    ml
    ground mixed spice
  • 2
    Granny Smith apples, peeled and thinly sliced into wedges
  • 80
    ml
    smooth apricot jam, warmed
 

Method

50-60 min
 
Preheat oven to 180 ºC. Prepare cake batter accordirg to standard butter cake method (see recipe), adding the spices to the flour before folding in. Spoon half the mixture into a greased and lined 20 cm cake tin. Spread a third of the apple slices over batter, then cover with remaining batter. Arrange remaining apple slices so that they overlap each other around the edge of the cake. Bake in the oven for 1 hour, or until cooked through. Spread half the warmed apricot jam over the top of the cake as soon as it comes out of the oven. Cool in the tin. Once cool, remove from tin and brush with remaining warmed jam. Makes a 20 cm cake.
