Apple and rhubarb streusel

    rhubarb

    fresh ginger, peeled and chopped

    soft brown sugar

    cold water
  • STREUSEL TOPPING
  • 50

    wholewheat flour

    oats

    soft brown sugar

    cold butter
 

Method

Peel, core and slice apples, then layer them in a 1 litre ovenproof dish. Peel and cut the rhubarb into even lengths. Place on top of the apple slices. Top with the chopped ginger and sugar, and add the water. STREUSEL TOPPING: Rub all ingredients together until mixture resembles coarse breadcrumbs. Sprinkle over the fruit and bake in preheated oven for 40-45 minutes until golden. Serve with custard or cream. Serves: 4 Preparation time: 20 minutes Cooking time: 45 minutes Oven temperature: 190 ºC
