Ingredients (12)

110.00 g margarine
100.00 g white sugar
2.00 eggs — large, beaten
120.00 g flour — cake
140.00 g flour — wholewheat
20.00 ml Baking powder
2.00 ml salt
385.00 g apples — pie, coarsely chopped
75.00 g raisins — seedless
250.00 ml milk
2.00 ml vanilla — essence
cinnamon sugar

Method:

Preheat the oven to 200 ºC (400 ºF). Grease a muffin tin with 12 hollows with margarine.
Cream the margarine and white sugar till light and fluffy. Add the eggs and beat well.
Sift together the dry ingredients and return the bran left behind in the sieve to the bowl. Add the dry ingredients to the egg mixture. Add the apples, raisins, milk and vanilla essence and mix till the ingredients are just blended and the mixture is still slightly lumpy. Fill each muffin hollow three quarters of the way up and sprinkle with cinnamon sugar. Bake far 20-25 minutes or till done.
Makes 12 muffins.
