Method

 
CRUST 1. Sift dry ingredients together. Rub in butter until it resembles fine breadcrumbs. 2. Beat the egg yolk and 1 egg together and add to dry ingredients. Knead and put aside in the fridge for 1 hour. 3. Grease a rectangular baking tray (35 cm x 24 cm x 4 cm). Roll out the pastry and line the baking tray. Freeze the rest of the dough. POPPY SEED FILLING 4. Boil milk and castor sugar together. Stir in the poppy seeds and bring to the boil. Add the remaining ingredients and stir well. Leave to cool. APPLE FILLING 5. Peel apples, remove cores and cut into slices. 6. Place all ingredients in a saucepan and cook until apples are soft. Add a little bit of water if necessary. Leave to cool and remove lemon peel. NUT FILLING 7. Bring the milk and castor sugar to the boil. 8. Process nuts until fine and add, along with remaining ingredients, to the milk mixture. Leave to cool. 9. Put cold nut filling into lined baking dish and smooth over evenly. 10. Cover with poppy filling and smooth over evenly. 11. Finally add apple filling and grate remaining crust over the apples. 12. Brush with the beaten egg. Bake in a preheated 160 ºC oven for 50 to 60 minutes. 13. Cool, cut into squares and dust with icing snow.
