Apple and pecan nut tart

    butter
  • 180
    ml
    light brown sugar
  • 80
    ml
    cream
  • 150
    g
    pecan nuts
  • 2
    Granny Smith apples
  • 2
    eggs, whisked
  • 1
    x 22 cm prebaked pastry crust
 

Method

 
Preheat the oven to 180 °C.
Slowly heat the butter, sugar and cream in a saucepan.
When the sugar has dissolved bring the mixture to the boil and simmer for one minute, stirring continuously.
Remove from the heat and stir in the pecan nuts. Leave to cool slightly.
Cut the apples into 1 cm cubes and stir into the butter mixture along with the eggs.
Spoon the mixture into the baked crust and bake for 20 to 25 minutes.
Leave to cool before serving with whipped cream.
