Ingredients (9)

2.00 apples — large, peeled and core
2.00 pears — large, cored
1.00 eggs — lightly beaten
1.00 lemon — juice only
45.00 ml sugar
1.00 ml mixed spice — ground
2.00 ml cinnamon — ground
45.00 ml flour — cake
sunflower oil — for frying

Method:

Grate fruit and squeeze out excess liquid. Place in a bowl with egg, lemon juice, sugar and spices. Mix well.
Stir in flour (mixture should not be too runny).
Heat oil in a large, heavy-based pan, spoon in 65 ml (1/4 cup) fruit mixture for each rösti and shallow fry on both sides until golden, 5 to 6 minutes.
Don’t try to fry too many at once, rather cook in batches.
Remove from pan, drain on absorbent paper and keep warm while frying remaining rösti.
Sprinkle the fritters with cinnamon sugar, or serve with a dollop of mascarpone cheese and a spoonful of berry coulis.
