Apple and pear rösti

    large apples, peeled and cored
  • 2
    large pears, peeled and cored
  • 1
    egg, lightly beaten
  • 1
    small lemon, juice
  • 45
    ml
    sugar
  • 1
    ml
    ground mixed spice
  • 2
    ml
    ground cinnamon
  • 45
    ml
    cake flour
  • sunflower oil for frying
 

Method

 
Grate fruit and squeeze out excess liquid. Place in a bowl with egg, lemon juice, sugar and spices. Mix well. Stir in flour (mixture should not be too runny). Heat oil in a large, heavy-based pan, spoon in 65 ml (1/4 cup) fruit mixture for each rösti and shallow fry on both sides until golden, 5 to 6 minutes. Don't try to fry too many at once, rather cook in batches. Remove from pan, drain on absorbent paper and keep warm while frying remaining rösti. Sprinkle the fritters with cinnamon sugar, or serve with a dollop of mascarpone cheese and a spoonful of berry coulis.
