Ingredients (9)

580.00 ml flour — cake
15.00 ml Baking powder
10.00 ml cinnamon — ground
180.00 ml brown sugar — tightly packed
2.00 apples — golden delicious
190.00 ml sultanas
125.00 g butter — melted and cooled
2.00 eggs — lightly whisked
180.00 ml milk

Method:

Preheat the oven to 180°C and grease 12 muffin tin hollows.
Sift the flour, baking powder and cinnamon into a large mixing bowl.
Stir in the brown sugar, apples and sultanas. Lightly whisk the melted butter, eggs and milk together and fold into the flour mixture using a large metal spoon.
Don’t overmix – just until the flour is moist.
Spoon the mixture into the prepared muffin tin hollows and bake for 20 minutes or until golden brown and cooked through.
Allow to cool in the tin for 2-3 minutes before turning out onto a wire rack.
Serve warm or at room temperature with butter if preferred.
