Apple Pie with marzipan lattice

200.00 g readymade shortcrust pastry — frozen
5.00 red apple
50.00 ml castor sugar
15.00 ml cornflour
orange — grated rind
200.00 g marzipan

Method:

Preheat the oven to 190 ºC (375 ºF). Spray a 20 cm pie dish with non-stick spray. On a lightly floured surface, roll out the dough till 3 mm thick. Line the pie dish with the dough. Prick the base with a fork and chill till needed. Peel and core the apples and cut into thin slices. Sprinkle with a little lemon juice to prevent discolouration. Combine the castor sugar, cornflour and orange rind and sprinkle over the apples. Leave for 10 minutes before arranging in the prepared pastry crust. Roll out the marzipan till very thin, about 3 mm. Cover with a damp cloth to prevent it from drying out. Cut into 1,5 cm strips. Create a latticework effect with alternate layers of marzipan on top of the apples. Trim the edges and bake for 30 minutes or till the pie just begins to brown. Serve hot or cold with cream, if desired.
Makes a medium-sized pie.
