100.00 g walnuts — chopped
60.00 ml flour — cake
15.00 ml sugar
1.00 ml cinnamon — ground
1.00 ml cloves
30.00 ml butter
BATTER
375.00 ml flour — cake
10.00 ml Baking powder
2.00 ml Bicarbonate of soda
7.00 ml mixed spice — ground
2.00 ml salt
125.00 ml sugar
2.00 eggs — extra large, whisked
250.00 ml Buttermilk
250.00 ml apples — grated

Method:

Preheat the oven to 180ºC (350 ºF). Spray a muffin tin with non-stick spray or grease with margarine.
Mix all the ingredients for the topping and rub in the butter with your fingertips until well blended. Set aside. In a large mixing bowl sift together the cake flour, baking powder, bicarb, mixed spice and salt. Add the sugar and mix.
Mix the eggs with the buttermilk and add the grated apple. Add to the dry ingredients and mix lightly until just blended. Fill each hollow to three quarters. Make a slight hollow in the centre of the batter in each hollow and fill with a teaspoonful of the topping. Bake for 20 minutes or until done (a testing skewer should come out clean). Cool slightly in the tin before turning out onto a wire rack to cool completely.
Serve with butter or whipped cream.
Makes 12 muffins.
